The Executive Chef, The Chef, Marek Soczewka, took his passion for cooking from his family home in Podlasie. However, he draws culinary inspirations that can be felt in his dishes from all over Poland, Europe and the world. Marek has over 25 years of experience in the catering industry, including 19 years worked in 5-star hotels. With love and respect for culinary tradition, he experiments and gives a new, original form to well-known flavors, surprising us with fantasy on a plate.
Inspired by nature
Cooking is Marek's passion, he is keen on experimenting with new flavours. Above all, he values high-quality, fresh products, and tradition. He believes that coming back to the roots of Polish cuisine and discovering culinary heritage of Kashubia, which is famous for its plethora of recipes, is worth the effort. Contact with nature is very important to Marek. Being close to nature is where he draws his inspiration for his dishes. He meticulously selects products, paying attention to where their come from, their quality, and breeding methods. He does not compromise in selecting products. He uses only the top-quality, fresh, local seasonal products to create absolutely delightful, yet simple dishes.
