Café Polskie Smaki Restaurant Executive Chef
The Executive Chef, Krystian Szidel, was born in Gdynia where he departed on his cooking adventure. He inherited his passion for cooking from his grandparents. Between 1992-1997 he travelled several times to the French Riviera, where he polished his skills and gained experience, as well as opened up to experiments. In the times in which Poland, as he puts it, was a culinary desert, Krystian had the opportunity to work in renown French restaurant, including some with Michelin stars.
According to Krystian, working in a kitchen is all about team work. The Chef is famous for keeping his calm, as well as maintaining discipline. He is glad that he can rely on his employees. He says that without them, no success would be possible.
Cooking is Krystian’s passion, he is keen on experimenting with new flavours. Above all, he values high-quality, fresh products, and tradition. He believes that coming back to the roots of Polish cuisine and discovering culinary heritage of Kashubia, which is famous for its plethora of recipes, is worth the effort.
Contact with nature is very important to Krystian. Being close to nature is where he draws his inspiration for his dishes. He meticulously selects products, paying attention to where their come from, their quality, and breeding methods. He does not compromise in selecting products. He uses only the top-quality, fresh, local seasonal products to create absolutely delightful, yet simple dishes.
